Frittata is my current obsession. Every week the ingredients are different. Full of bursting flavors. This week’s version began with a layer of thinly fried potatoes, bell pepper, onion & garlic, followed by diced tomatoes, spinach and feta. The eggs (8 to be exact) where whisked with French cream. Upon serving, top with Salsa Verde.
